DIRECTIONS:

Combine the dry ingredients in a bowl (cornmeal, flour, salt, sugar, baking powder and baking soda).

Beat the eggs in a separate bowl and add the buttermilk and melted butter to them.

3.

Mix the wet and dry ingredients together and stir until they blend smoothly. Ensure that no lumps remain.

4.

Now add the bacon and cheese to this mixture and combine nicely.

5.

Preheat the oven to 400 degrees F and grease a 9 x 13 inch baking dish with baking spray.

6.

Pour the cornmeal mixture into the baking dish and flatten with a spatula to spread it evenly.
